I run HAOS on a Mac Mini and just purchased a 4TB Samsung 990 PRO NVME as external storage. I think HAOS is pretty write-intensive, right? If I move HAOS to this drive, will I kill it long before its time or should I be good for many years?
HAOS is not write intensive. The SQLite database it uses is. But you can easily replace that with something else (like mariaDB) to prevent that.

Well. To give you an idea, I am running it on Unraid server where I have dual cache, and all of my dockers and VMs (HA included) are purely on cache drives. I use Kingston KC3000 1TB purchased 2 years ago.
Here are some stats:
- Data units read 37,969,651 [19.4 TB]
- Data units written 361,930,333 [185 TB]
- Power on hours 19,614 (2y, 2m, 27d, 6h)
So my recommendation would be - get something cheaper with longest warranty. For instance - I exchanged these just a week ago for 2x2TB Lexar SSD NM710 2 TB with 5 years warranty. They claim 1200TBW, which should be more than enough considering I “used” 185 in 2 years for more than just HA itself.
