This probably been asked many times, but I'm tired of going through all the open posts just to find out the problem is not similar to mine.
I have a couple of Aquara temperature sensors on zigbee.
At the beginning they all worked just fine, updating the temperatures reqularly, and I was able to track them.
After a couple of days, they simple stopped, and they always show the same temperature, no matter what.
If I restart them, or delete and re-add them to HA, they work again for like half day, but then they go back to the same behavior again.
Battery replacement didn't help.
I have lots of these set up and they work good. How is your Zigbee network, do you have enough routers, are they powered all the time? These sensors are Zigbee 1.2 so they do not support jumping to other routers if they one they are connected to goes offline.
AFAIK, they all turned ON (by switch), and turned off by HA.
Maybe 1 of them we rarely turn on, and most of the time it's off by switch. But that's on rarely.
If the lightbulb gets turned off at the power switch then they can no longer act as a router and you will lose contact with the aqara temperature sensors. Unless they are the T1 temperature / humidity version in which case they can re-route to another router if one is in range.
I know they can't act a router if off.
But I have 5 temp sensors. 1 of them right next to the HA and antenna. I don't know why it would connect to something on the other side of the house.
All sensors are doing the same. Closer or far.
I also have a couple of Bilresa Dual button switches.
They tend to simetimes just simply not working. I don't do anything, not restart any devices or something, and they come back in a day or two...
To rule out zigbee repeaters like bulbs that might be turned off, you might want to turn them all off first, then re-pair your temperature sensors so that they establish a route to the coordinator that isn't going through those other devices.
Assuming they are the 1.2 versions, they'll stay on that route, and assuming they aren't miles away from the coordinator, you might find them to be more stable.
Personally I'd find a way to stop them (The bulbs) being turned off at the switch, as the mesh will be much stronger with them present. I usually put a wireless switch over the top of the original wall switch and control them that way, so they never lose power.
I paired them like 30cm away from the coordinator. I'll check the routing in the map, but I guess they weren't connected to the bulbs or anything. Everything was turned on for sure for a full day, yet, still no update on the temperatures.

I'll try the above solutions tho, but I'm already tired of repairing and resetting everything for the millionth time.
