Which color LED with GU10 socket is the best for a local only home assistant setup / integration?

I’ve got a couple of IKEA ones which work quite well over ZigBee (so fully local). I have them connected to a Conbee 2 and ZHA.

Ok but color Gu10? Cant find on ikea site ?!?!

What protocol do you want to talk to the bulbs?
There are quite a few options: Shelly, Philips Hue, Ikea, Nanoleaf, …

Doesn’t matter I didn’t know that Phillips has GU10 LED.
I prefer Shelly but they cannot deliver at the moment and I don’t know why

Know that depending on the protocol, it might be more interesting to get a Shelly or Sonoff module that keeps the power on, but uses HA to send the toggle command to the bulb. My ZigBee bulbs (Philips GU10, no color) always need some time if the power was turned off physically.

so I read the integration infos for home assistant, there’s right that I can connect the lamps without the ikea gateway when I have the Nabu Casa zigbee ZBT USB dongle?

Do they react immediately to a switch?
and are they operated with a wall switch?

Yes, but it’s a bad idea to switch off zigbee lights with a dumb wall switch. You’ll ruin your mesh & run into issues with other Zigbee devices once you add more.
Get a zigbee switch which supports decoupled mode. You can read more about it if you search these forums for “decoupled”.

That’s the thing with ZigBee lights, they are powered on/off with a physical switch just as any light.
However, the way you will probably want to use them is that you control via ZigBee if they are on or off.
By turning the physical switch off, you deprive the bulbs of electricity and thus the network forgets/unlearns the routes to the bulbs.

You will indeed be able to connect the bulbs to HA with just the dongle, you will need to get then into pairing mode. If that info isn’t very easy to find, check the zigbee2mqtt site, even if you will be using the ZHA (default implementation of ZigBee in HA), the wiki is very useful.
