After years of trying to get the Google Assistant integration to consistently work with local fulfillment (Google Cloud API and DuckDNS), I found Matterbridge. If you have a Matter supporting Google Home speaker/display then you can expose most HA entities to Google Assistant/Gemini locally over Matter with Matterbridge.
