Wondering if I can have a tab on my dashboard only to control my Jellyfin. Want to see my whole movie list and starting it to my tv.

Yes. I don’t have examples but there are several you can find here through search.
Jellyfin is open source so currently playing, controls, and other items are available. Many people have created custom dashboards to display and control these.
