Can't pair matter/thread devices on one of two servers

I’m having trouble pairing new matter/thread devices with one of my two home assistants, but not the other.

Both servers are set up on the companion app on my phone. Both servers (which are physically distant and on totally different networks) have thread border routers.

Server one: ha-thread-522f
Server two: ha-thread-27ef

Details:
When I’m on the server one (522f) network and try to set up thread devices, it works fine and pairs.
When I’m on the server two (27ef) network and try to pair something new, it goes thru the matter pairing process fine until the end when it says it’s trying to connect with the 522f thread network of server one, and fails, obviously.

Anyone have any ideas on how/why it’s getting confused and tries to connect with only 522f no matter which server I’m trying to pair with?

General rule of thumb is that a iOS/Android mobile device will only use one Thread credential set and it tends to stick with that one set even if it knows about others. So for sure, using another mobile device for the 27ef network would solve the problem
