Has anyone managed to do this, or at least can anyone advise whether it is possible to upload the TASMOTA FW to this Gateway?
It already has a lot of things running on it and it is ideally placed to cover the entire house, unfortunately the RPi with the dongle cannot be placed in this place.
It’s been a few years, but if memory serves me correctly, custom firmware like Tasmota and ESPHome variants for Tuya/Smartlife devices are only for end-devices (typically battery powered sensors) and bridge-devices (typically mains powered sensors, lights, switches), not host-devices like hubs.

I successfully flashed the FW on the TYGWZ-01 - but it doesn’t have the protocols I need, it’s just ZigBee (which I have at home), but this is MZHUB-MS - it has a different chip and I couldn’t find the FW written for this

After trying the USB-dongle, I found that it has a much greater range than this gateway and greater reliability - no outages.
I think I’ll switch to the USB-dongle soon, even if it means minor construction work
