I used to be able to set local connection to “dark” & remote connection to “light” in the companion app. I did this by setting dark when I was on local connection then access the remote connection & set light mode. This worked perfectly until today, any ideas what may have happened?

Those parameters and now common to a user, not to a display device. You will need to set up different users for the 2 interfaces so that you can change the theme. This was to make it a better experience for users so all their screens looked the same.
Personally I didn’t know this was a problem, but one of their surveys of potential customers probably told them it was. ¯\(ツ)/¯
