When I add a new ESPHome device to HA, it shows up fine in Devices and works fine, but it is not added to ESPHome Builder so I can edit the yaml and make changes. Any ideas?

No, it is not in the esphome folder. I should have mentioned that this is a purchased ESPHome device. The 60mmwave Seeed Studio device to be specific. But it also happened with the Voice PE devices and the Satellite1 Voice devices. My understanding was that these would be automatically added to the ESPHome dashboard upon adoption.
You should be able to get the YAML from the device manufacturer. Put it into the esphome folder and you should be able to edit it using the ESPHome dashboard.
Make a backup copy of the file before you muck about in it.
