Does anyone know where to find a detailed description of the sensors for EcoFlow devices? For some of them, I don’t know what the values mean or how they are calculated.
No luck on the vendor support page? That would be my first port of call.

You mean this? The docs are pretty good here, what specific values on what device with what API don’t you understand? The integration doesn’t calculate anything, the data is pulled directly from the cloud.
