Hello Lee,
When I see 500 errors which is the server eventually saying WTF!!, I do a config check on my system 
to make sure it will reboot and I restart the host 
(Not reboot the server, power it down and up).
That will eliminate a lot of things you can change. If it’s still there I go further with troubleshooting and logs and all the things. The Home Assistant Cookbook - Index
