I m looking for a flowmeter running with zigbee to detect the consumption of the hot water, soon the flowmeter detect the consumption i will start the heating of the water.

These most likely would not be happy on the hot water side, however perhaps will give you some ideas for a DIY system, if on the cold side. The LinkTap systems (overall) are for cold water gardens. I have been very happy with LinkTap as a garden solution. Their systems are not really designed for your application, however, again their products might give you some ideas. Their build quality is outstanding. I have no idea if you could create a custom converter for their Zigbee water valve with flow meter, however, again perhap will give you some ideas.

You can place it on water heater inlet, cold side.
