GPIO status at BOOT

I have an ESP running ESPHome and a relay board controlling my furnace.

If there is a power outage while the furnace is running (heat or air) upon power restore the ESP closes the relay as that was it’s state before the outage.

How do I set it to “default” no outputs on at boot?

Have a look at the restore_mode option: Switch Component — ESPHome you probably want ALLWAYS_OFF.
