I finally got my ISG Box SE binded to the app and my LinknLink account, but then I just end up on a blank home screen with wallpaper that looks nothing like the interfaced I’m seeing in tutorials and other examples. Am I missing a step? Is this not setup correctly?

How old are these tutorials? Also, while I don’t have any direct experience of LinknLink, I suggest you have a look at this
Likely all the tutorials are old because this hardware will to my knowledge only run core install version of HA, which was de-cataloged last year.
You are going to be on your own pretty much most likely.
