My pump turned on at around 5 am but the history doesn’t show it. Am I missing something?

The activity log shows your pump switch turned OFF for 2 seconds and has been ON for the remainder of the time in that selected time window.
The graph is showing the 5-minute aggregated power statistics for your pump power sensor.
You’d need to tell us more about this pump to help you out.
As a starting point, I would go to the history page, and choose both the switch entity and the power entity and display them. This has two benefits:
1: It plots the history data instead of the statistics data
2: It plots both entities on the same timeline
