The weekday is incorrect despite the timestamp being correct so I assume this is a timezone thing

Actually I just realized the issue …its the way the base of the graph is shown. Typically when graphing with time we have a line say 9am - that is specific - days on the other hand cover the period from 12am to 12pm. The lines on this graph (vertical) represent the start of the day - typical if I was graphing a day I would place the label at the time point in the middle of the day with lines vertically representing the beginning and the end. Its a visualization thing
I do not think I agree that the label for a day should be in the middle for a time axis and a line graph. For a bar chart, middle below the bar would make sense, but since the date labels are inline with time labels, they should represent 0:00 in that day. I do wonder why there are no time labels inbetween though. I have them in other places, and dates in the middle of the day would be weird here:

I think the problem is the history card and the way it displays time
There’s no problem. The day is labelled at the start of the day, 0:00.
