I just unchecked “Track unknown / unnamed devices” :
Meanwhile I have a lot of devices trackers from this integration that I want to delete. Unfortunately I can delete it that way :
What am I missing ?

You cannot delete entities that are being provided by an integration until that integration stops providing that entity, and how/when it decides to that is specific to the integration.
Some integrations let you delete devices, which in turn will remove their entities, but not all.
You can try restarting HA to see if it stops providing those entities after unchecking the box, or if not, then you would have to remove the entire integration config entry before you would be able to delete them.
