I’m listening to my weather station usin rtl_433 next. The output is sent to mqtt.
This gives me this:
How do I change the name Sensor to something else ?

That is not the name of the sensors. That’s just a heading indicating that the entities below are sensors, rather than configuration or diagnostics.

So, if I understand correctly, when adding more sensors, they will all be visible on the Sensors card ?

Yes.
There are two places to my knowledge where that headline appears.
Number one, in the device page for the device. Every device has a page where lists the sensors that are not diagnostic and also not configuration. And they would be headlined with the word sensors.
Number two, in the default overview dashboard that Home Assistant auto generates to show all of your entities (minus those classified as configuration and diagnostics if I recall correctly). Any such entity not assigned to an area, or any entity belonging to a device not assigned to an area, will appear under the Sensors heading. As you assign your entities and devices to different areas, they will begin appearing under the specific heading for that area in the overview dashboard.
