There seems to be very little choice currently for easy-to-integrate dashboard displays. Lots of people use things like Android tablets or flash/hack other smart displays. It would be really nice to see a Voice device that combined voice and touch. A small device that sat on a desk with the same voice capability but with a small screen to display a HA dashboard.

I’m afraid you’re in for a long wait. In it’s current iteration, HAvoice can’t even run bluetooth proxy at the same time as voice, let alone a display+touch.
Give it a few more years, maybe some day in the future we’ll have beefier ESP chips available.

IMO, the best way to do this is to get support in the mobile apps. Cheap android tablets are a commodity device with microphones, speakers and displays that work great with Home Assistant. They work fine if you tap the assist button. They just need to support microwakeword or openwakeword.
