LED Driver/Controller w/Dumb switch

I’m in the early stages of building my first home and am trying to future proof my kitchen for the ability to add under-cabinet lighting. I’m very much new to wiring and this is my first time doing anything with home automation.

I was going to request the builder add an outlet above the microwave and behind the refrigerator tied to a switch so when the time comes I can plug in a HA compatible driver and route all the LEDs below the upper/lower cabinets. What I would really like to be able to do is have the lights be dimmable from a physical switch (or remote) on the wall as well as be automated/controlled from HA. I want to avoid being completely reliant on HA in case the integration breaks or I sell the house in the future. Is there any configuration of hardware I can get to make this possible?
