I am currently exchanging all the WiFi Switches (several Tuya and Nous A1T) by Nous A1Z-Zigbee switches.
Now plenty of them are deeply integrated with, custom sensors, automations and dashboard cards…
Is there a way to automate at least some of this migration or does that all have to be done by hand?

Depends on how you built your automations.
If you used device triggers you’ll have to update them. If you used entities, just ensure the replacement has the same entity name as the device it replaced and it should just pop up and go as long as the new device has the same entities as the old.
All of that goes out the window of course if you replace with a different device.
