MQTT HVAC vs Generic Thermostat

Newbie here. Forgive me if I’m wording this wrong…
Why would a person use the MQTT HVAC instead of creating an MQTT switch and MQTT sensor and then using those via the Generic Thermostat? What are the pros/cons of the two approaches? Or, have I misunderstood completely?
FYI…I have a Sonoff TH16 that I’ve succesfully setup as MQTT Switch and MQTT Sensor. I’m now considering what my next step should be.

The MQTT variant has more specific MQTT options. Generic thermostat only allows a switch to be turned on and off and also doesn’t allow Heating and AC combined in one thermostat.

To respond to your question btw, If you only have a MQTT switch and sensor, you should use the generic sensor as it uses a toggle-able entity. The MQTT HVAC is for HVAC that can receive commands other than just turn on/off.
