I am trying to increase the VM volume to 30GB from 15GB. I have increased the VMdisk volume to 30GB but this does not reflect in HomeAssistant.
After booting into gparted, I can see that there is another volume that is unallocated, however it does not let me increase the size of the previous 15GB volume with the new 15GB volume?
Any ideas?

It cant expand across another partition , the swap partition in your case.
Cant remember if possible but if you can move swap it should be expandable. Probably can delete swap, not like it stores data but i am not sure how that’ll work out. Maybe itll recreate it or maybe youll just need to recreate it(it being the swap partition)
Yea so im guessing if I can move the unallocated space to dev/SDA1 then I can expand the existing volume right?
Yes unallocated is free space you can use to expand

I would not do anything unless i had a reliable backup that i know May be restored
I deleted the SWAP partition (the entire sda2 partition) and then HA would not boot. Maybe I should have just deleted sda5 but then im still stuck in the same position with the unallocated space unusable?
Any ideas?

Did you just delete and nothing else?
Thats the purpose of the backup. you can always resinstall, expand, restore backup. may be faster
