I want to make a night bolt detection with a external mechanical sensor in the lock. Does anyone have already made this or can suggest an idea what device with an external i/o should I use.

Show a picture of your lock might inspire ideas…
I would use an inductive sensor from inside the door frame if that is possible. Just drill a hole in way that allows you to run a caple to your esp32 or whatever you use.
A word of caution in my opinion adjustable sensors a far less reliable than ones where the distance is fixed.
For more specific advice I would need a picture of what you are trying to built

If you are using small switch, easiest way is probably to wire it to magnetic door/window sensor .
You just solder it to the reed switch contacts. You can remove the reed switch or leave it on place if it’s normally open model.
I can not give you specific advice on what brand and moddel to buy, i would recomend you to buy one that works on 315mhz or whatever is your local ISM frequency. Wifi would take to mutch power, if you want to run it from a battery
