Greetings,
I am looking for a solar inverter which is off grid, does not require a phone app or online account to work. I want to be able to monitor, and possibly control with HA.
For now, this is educational only. I would like to connect one maybe two 200W panel through one inverter where the inverted can be wired, wifi, z-wave or zigbee. I am planning to use a Zooz ZEN05 to connect the inverter to my home so I can monitor the kWh,Amps, etc.

Use the Integrations page to check which ones have an IOT Class of Local Push or Local Polling. Unfortunately, there is no Solar category to filter by, so you’ll have to rely on text searches.
Here’s a couple to get you started:
Growatt inverters would do that. Off grid, no phone app needed and controlable via HA (esphome - modbus)
A solar inverter is kind of a big deal 
Not like a light switch.
I’d first look at inverter capabilities that you want/need as I feel that is really more important. From that list that are acceptable, then see what can work with HA off the line.
