What is the -07:00 at the end? It’s been the same everyday.
7 hours behind GMT I think.

As per the recently improved documentation
now() returns the current date and time, formatted to your local timezone.
This formatting is, however, not ISO format since the T is missing.
The default format includes the timezone offset as +/-hh:mm

and you are probably on DST too.
