Polling type sensors (like REST api sensors): can the time be set to something returned by the API?

I have some data I’d like to graph (and react on) in Home Assistant. It is, however, updated sporadically. Is there a way for Home Assistant to record the time of measurement as provided by the remote datasource instead of the time the value was polled by HA?
