Retrofitting a lambda probe in a tiled stove

My father has been running a tiled stove for 10 years. I would like to install a lambda sensor to optimize combustion.

The fire damper is on the left at the back. At the top right you can see a service access. You could install the sensor there, for example.

Which probes are available that have open interfaces, so that I can query the values myself? It would also be practical if a temperature sensor is installed or could be installed in the same place.

I found a project here, but it’s a long way from Plug&Play, at least I don’t know how to get the Bosch LSU 4.9.
