Is it possible to see the countdown/timer for an automation/blueprint where light turns on with motion, turns off (say) 5 mins later, with a countdown. I want to know what that countdown is currently at.

if you have used a timer then you could just show the current state of the timer using something like an entity card.
If you are using a trigger or wait with a ‘for’ then I dont think you can.
