Question… is there any functionality i will be missing if i use my sonoff valves (TRVZB) in home assistant through Zigbee2MQTT, is there ant functionality i will miss, or will all the features be available?

Well, with Ewelink you are at their mercy. They go out of business you are scrambling. Also all your commands go thru China servers, so if the internet is slow or down, so are you.
Z2m runs in your house, you own it.
Yeah I know it, in asking if for example, features like valve % open/close is available in HA for example or if there is any feature exclusive for ewelink that is not available in z2m
z2m interviews each device and has a specific list of entities to create for each hardware, and if you don’t like that there is a manual way to add ‘quirks’.
