It would be nice, to also support Devices in yaml mode, like mqtt does.

I know, that there is also support for devices in KNX UI Mode, but it is incomplete (many platforms (sensor/binary sensor and so on) are currently not supported).

Last time I checked (few years ago probably) this was not allowed for yaml - as unique_ids, as needed for that feature, aren’t allowed to be user configurable. This may be different nowadays though.
Mqtt has always had an exception of that rule.
No, it’s still not allowed. I wanted to add it for templates, Frenck actually tried to add it as well but hit some unintended road blocks.
