Touchscreen ESP - Looking for ideas

I have an ESP32-S3 based 7in touchscreen unit - ESP32-S3 7inch Capacitive Touch Display Development Board, ESP32 With Display, 800×480, 5-point Touch, 32-bit LX7 Dual-core Processor, Supports WiFi & Bluetooth | ESP32-S3-Touch-LCD-7

I had some ideas when I initially got this unit. But now I’m thinking I can do all that with a cheap tablet or old phone… Anything I do with this would require UI design or a pre-made solution. Has anyone worked with these? Anyway, let’s hear those ideas. Thanks.

Both esphome and openhasp likely support it. (Hard to say without you telling us the exact touchscreen and display devices used).
