I see two servers on my companion both related to my smartphone…
Can I delete one of them without risking anything?
Is it related to the multiple Mac adresses generated by phone?

Hi does your HA have 2 IP addresses and no, it’s not because of your mobile app.
If you tap on them you can see the address is being connected to.

I have deleted one of these servers without apparent problems?!
Where can I learn more about all this as I don’t understand the purpose of this option of creating servers via the app companion?

The option exists for people with multiple HA instances. If you have only one you do not need the second one. It is however wise to check out which one you are actually using. The sensors and notifiers in your automations might be linked to either one, so if you delete one that is used in automations/dashboards/geofencing you may need to fix those.
