From what i can see though with the central boiler system you would only do a service call though to just have the set point above or below a number not dynamically change based on the individual Vtherms (rooms) temperature and the main units current temperature. If anyone has achieved this or has any advice it would be greatly appreciated.

I am not sure if I fully understand your last remark. But in this post, I explain how I finally ‘solved’ it.
The central boiler now automatically takes both current and target temperature from the room with the biggest delta between current and target temperature (= the room with biggest heating need).

Hi David, Thanks, this is great coding! I further adjusted it, so I also know which area is requesting heating. This is my sensor that is calculating the right heating delta. I did set it up in the (old fashioned but reliable) configuration.yaml. So I didn’t solve it with the Versatile Thermostat functionality (I use it for all the other stuff), but with some template sensors and one automation.
