Does this strike anyone as weird? The spikes I can understand might be for a reason but what could cause my processor usage be around 35% and then suddenly drop to less than 10%?

Database scrub? Check your log files for the time in question.

Do you have any custom somponents active?
If so deactivate them and see if that helps
What Hass.io addons are you running?
Try stopping them one by one and see if processor usage drops…
