I have put together a local snips which seems to work.
This involves the fix from hcooper and I have fixed the Unsupported bus type error.
There is an error in the entrypoint.sh, so what I did was pull it out of the original docker, fix the error (see: https://github.com/snipsco/snips-platform-documentation/issues/18 ) and create a Dockerfile which copies my entrypoint.sh to the image.
I will wrap things up and see if I can create a repo on git for it 
It will need to build locally for that to work, but that should not be a problem.
The build in snips used a prebuild images, which is useless right now

I have installed my repo on a clean hassio install, installed the samba add-on so I could upload my assistant.zip to the share folder.
I am using my usb headset, so mic and speaker are both hw:1,0
Seems to work fine for me

Pretty clear you haven’t unzipped your assistant in /usr/share/snips
Well…docs say I should upload the zip file
Some of the docs are outdated, but can you clarify your setup? How you are running hass and how you are running snips? There was an issue with the hassio addon for snips I believe but I don’t use hassio so can’t help there. There are posts above with the fix I think

Am I supposed to install all packages and runs them with same config parameters?
I installed all.activated the bridge with my local mqtt. Or how is it supposed to be configured if I wanna use my own mqtt server?
I have the feeling it just dies not wanna work but as I’m not familiar with docker …I dunno what to do
I found that when activating bridge you get and invalid config error, also with the orignal.
First: set bridge to false, there should be no errors
Second: set bridge to true, set your ip (between quotes) and port (without quotes). This will result in the errors you gave.
Third: Try it with specifying a user and pass, that worked for me
