What’s the best way to get notified when the Zigbee2MQTT service crashes? Thanks.
Several options depending on your setup. I would first figure out why it is crashing and try to correct that. You could do notifications on zigbee devices going unavailable for example. Any more info on how you are running it?

Maybe because I launched an update? But after the update do I have to launch it manually?
Your adapter disconnected.
Yes, I have a problem with the network cable. When I move it, it disconnects. I need to check it. So, if the cable is disconnected, does the Zigbee2MQTT service stop? It doesn’t make sense. I think it should work without internet.
I wouldn’t know, since you are not sharing any details about your setup. If your network cable doesn’t tolerate moving it, throw it away.
mini pc, with proxmox and HAOS.
That’s not enough. What coordinator? Why does it disconnect when you touch the cable? Is it USB or ethernet? Start by replacing the cable.
