If anyone is still stuck try and set a static ip, that did the trick for me:

Lots of posts all over about this issue.
Seems one of the problems is Unifi equipment and mDNS
Solution posted is change
status_use_ping: true
I don’t see anywhere to enter this, nor a config file that mentions status

It’s in the configuration of the ESPHome addOn. Not in a device config file, the yaml, but rather a general setting in ESPHome.
Config > AddOns > ESPHome > Configuration > status_use_ping
