Help with Electric Smoker Control using a sonoff TH16 and a DS18B20 Sensor

The Thermocouple is in the middle of the back wall centered in the smoker (the black dot centered between the racks. It’s a waterproof DS18B20. You can see, the smoker is well used.

It maintains really good temperature. I just converted to Lovelace so I don’t have any temp data yet.

This is the controller in Lovelace. Still pretty chilly here in WI.

You previously said only a quarter of the sensor was in the smoker, but from the rear it looks like it is entirely inserted?
I imagine the wire would melt if it was fully inserted?

Any ideas on how I can get the DS18B20 sensor closer to the middle of the smoker?
My Ugly Drum Smoker suffers from wild temperature fluctuations between the middle and at the wall :frowning:

A type K thermocouple would solve the issue as it (and the wire) can withstand high temperatures. Would love to learn how to install one to a Sonoff TH.

Alternatively I’m thinking of running a copper pipe across the middle of my smoker, the DS18B20 would insert straight into the copper pipe.
The copper would allow the sensor to pick up a more accurate reading.

Thoughts?
