Looking for smart thermometer with external sensor

The only point of contact that actually measures anything is the tip (usually).
The point at which the two dis-similar metals make contact which each other is the point that is measured.
You can can always modify the plug of your desired type of probe to work the actual device.

Remember it is not the destination but the journey itself that matters…

I use esphome and 2 DS18B20 cable tied to the outside of the pipe then covered with pipe insulation. The temperatures are about 0.5 degrees of the values my boiler display shows.

The easiest way I have found to get this running is using the cheapest Sonoff you can find and add the sensors to it, just need to add a header to the board. This way I do not need to worry about power supplies, cases or very much soldering (which I am truly terrible at).
