Because sometimes upgrades broke stuff, and you don.t actually need that untill you take the plunge, maybe it would be cool an option or an add-on to list all versions of hassio available and let you choose one to go to.

The upgrades will show up for Hassio normally a day after the release.
To allow downgrades I would recommend that you always save a snapshot before an upgrade, this will allow you to just restore the snapshot to downgrade after an upgrade. It will also allow you to downgrade just an addon to the save version.

Yeah I use snap shots to downgrade.
yes, snapshots are the best to get back to a stable version with all correct settings.
However, after a downgrade it would be nice to have an upgrade path where I can choose the target version … not only the latest version:

I thought snapshots just back up yaml files not entire system.
The snapshot will restore what ever is checked. I had updated to version 0.76.0 and then updated TasmoAdmin and Node-Red. The updated addons would gave me error messages. I unchecked every thing except for the two addons and then did the restore.
Hassio remained at 0.76.0, but the addons rolled back to the previous version.
