I have an existing Google Home setup with a mix of Matter over Thread and Zigbee devices. I have a Nest Hub, a couple Home Minis, and an Aqara Smart Hub M100. I also have an Eero 7 that’s currently acting as the Thread Border Router because when I set up my Thread devices I didn’t yet have the Nest Hub.
So, I have 2 main questions:

Would it be better to factory reset everything then set them up with the HA Green, or just leave them as is, plus add them to HA? I’ve seen different opinions, but some are pretty old and may be outdated.

I plan to add Nabu Casa because, if I’ve read things correctly, I can continue to use the Nest Hub and Minis for “hey Google” voice commands, which will make my wife happy. She loves to ask it question. My question is: will the Google devices continue to be always listening and phoning home? I want to avoid that. I’ve seen answers that say Nabu Casa will do the listening, then pass the question on to Google, and other answers that say the only way to stop Google from always listening is to disable the mic, which would turn the devices into crappy speakers only. Which is correct (if either)?
