I tried accessing my home assistant dashboard at work today on my 5G but it was still looking for my server address. Since I’m paying for the Home Assistant Cloud shouldn’t I be able to access the dashboard when I’m away from my home network?

Yes, you should be able to access it using your nabu casa address as found under config\home assistant cloud:
