Currently you can add entities to be shows in the Android Auto app… but you cannot edit Label and/or icons
Considering that entities names are typically not “readable”/user friendly it would be nice to add a feature to add/edit the entities names… and also custom icons…

I think that adding such feature would be much better anyway… also because since in Android Auto you have less space for long text… it could be better to use some shorter names ONLY for Android Auto… and keep longer names for Webpage/app
I don’t think that adding such feature is something too complex to do… don’t you agree?
we currently don’t do that for anything in the app, not even in Wear OS. We take whatever is provided by the entity. The only exception being quick setting tiles
actually it requires the app to add a UI, to save additional data and also to add logic about what to show when. I think a template entity for your specific use case will work better here.
the feature as it stands now matches the same feature for Wear OS.
