For the Apple TV there are many remote control commands which can be sent to it.
The “Select”-Remote-Control-Command in Home Assistant is just like a touch of the physical button on the physical remote. But none for if you would physically press it on the remote.

Not sure what you mean by this. Are you talking about short press and long press?
No. On the Apple Original Siri Remote you only touch the button in the middle of the arrow keys or you press it. It’s a touch sensitive key.
Touching is for e.g. just showing the progress bar. Pressing it is e.g. a Play/Pause button.
The actual integration is touching the button, not pressing it
