Approach advice sought

Being new to building Arduino or similar component based systems (but not to soldering) what approach would you use to join/connect various sensors and modules? assuming I had some choice of course, given that with some components work with with shields, grove connectors etc, (joiner wires alone, headers, jumpers etc) For example: I am going to very shortly connect a pressure sensor to a Gravity Analog Current to Voltage Converter and then SparkFun ESP32 Thing. I generally like to solder as I have a nice firm connection. Note: I am not prototyping, everything is being built to be used on a farm in production.

Solder for permanence, prototype with jumpers or groves or whatever.

A lot of people even get PCBs made, and even assembled, by the cheap online services that exist now.
