Best way to migrate zigbee2MQTT Node Red and MQTT out of Home Assistant

With recent updates zigbee2MQTT and Node Red have become unstable and unreliable.

zigbee2MQTT is losing devices quicker than I can re-pair them and Node Red keeps going offline.

I guess if I moving these two I need to move MQTT out as well.

Any suggestions on best way to do this? I would really like to keep as much of the config as possible being that I had to rebuild zigbee2MQTT from scratch a month ago - changed the coordinator and repaired 100 devices.

I would rather not have to do that again.

I have already moved 90% of lighting out to reliable Hue, heating is on Tado, cameras on Eufy.

Just need to get the house reliable again.
