I want to graph the temperature of two sensors from OpenHardwareMonitor and one from a Zigbee sensor, but they show in different units (°F and °C).
I only want to change the two OpenHardwareMonitor sensors to Fahrenheit in the history graph view and not in the entity itself.
It is not only about changing a UoM, it is about a conversion as well, right?

You could create a template sensor for each then edit the UoM for just that sensor.
Then, of course, show your new template sensors on the graph.
