Choose ESPHome version on install

Currently issues with Dallas sensors are preventing one of my ESPHome devices from operating.

I have many full backups of my system, however it appears that restoring a partial backup of just ESPHome breaks the ESPHome compile process.

I would like to be able to simply install a completely new instance of HA / ESPHome on another server or VM, but there is no install process that allows you to choose the version of the add-on to use.

Requesting consideration of a method of choosing the version of ESPHome to install.

I join in and suggest another option:

Option to install your own version of esphome dev or beta.

I would like to be able to choose which version of esphome to install in the esp module.
This is important when there are bugs in the latest version.

I have the same problem with Dallas sensor… working for year and suddendly stopped working.
To rollback to the previous firmware version I’ve to run esphome docker image (standalone) pulling the correct version.
It would be nice to be able to select the version of the firmware directly from the ESPHome GUI.
