Connect a conductive sensor to ESP32

I have a underground tank for our house toilett waste.
Im workning on how to hook it upp to a ESP32.

I did something similar to our rainwater tank last year with a pressure sensor and an output of 0.5-4.5v with good result.
But this time it´s a conductive sensor that´s installed in the tank.
I think the sensor only works like on/off from when both electrodes comes in contact with the water.
I had some hope it was some kind of resistor that i could use to get a voltage difference.

My first plan was to do something like this:

But I dont think it will work now since it´s a conductive sensor…?
Would love to get a voltage reading from this, is it doable?

Maybe a link for the sensor or some kind of information would help people’s ability to give you useful information. People supposed to look at an image and automatically know the details of your sensor and how it works and then what advice to give you?
